鶏肉とほうれん草のシチュー、キャベツのサラダ、デコポン

デコポンは、ポンカンというオレンジの品種と、清見というオレンジの品種を掛け合わせてできた日本独自の品種です。不知火という品種の中でも日本の全国統一基準をクリアした特に高品質なものがデコポンとして認められます。ビタミンCとクエン酸を豊富に含んでおり、風邪予防や疲労軽減に効果があります。

本日のメニューにはデコポンが出ました。果汁が多く、オレンジ特有の酸味と甘みがありました。

Dekopon is a unique Japanese variety that was created by crossing an orange variety called Ponkan with an orange variety called Kiyomi. Among the varieties called Shiranui, only the highest quality ones that meet the national standard are recognized as dekopon. ごぼうは野菜、根菜の一種として食用にされます。豊富な食物繊維やビタミンB群やカリウムなどの鉄分も含まれており、健康に良いとされています。また、大阪には豊能町高山地区で江戸時代から栽培されているなにわの伝統野菜に高山ごぼうというごぼうがあります。

本日のメニュー、鶏ごぼう御飯にはごぼうが使われています。鶏そぼろにしょうがの辛味と昆布と鰹節の煮汁の深い味がよく出ていました。

There is also a traditional Naniwa vegetable called Takayama burdock that has been cultivated in the Takayama area of ​​Toyono-cho, Osaka since the Edo period.

Today's menu, chicken and burdock rice, uses burdock. The spiciness of ginger and the deep flavor of the broth made from kelp and bonito flakes went well with the minced chicken.

豚肉のオイスターソース焼き、中華スープ、ツナとチンゲンサイの炒め物

オイスターソースは、牡蠣を発酵させて作られる調味料です。主に炒め料理で使われることが多く、甘みと塩気が特徴です。ウスターソースと似ていますが、オイスターソースは原料が牡蠣なのに対して、ウスターソースは、色こそ似てるものの、玉ねぎやにんじんなどの野菜、りんごなどの果物、香辛料、酢などを熟成させて作られるソースです。

今日のメニュー、豚肉のオイスターソース焼きにはオイスターソースが使われています。牡蠣特有の塩気があり、豚肉に牡蠣のエキスや風味が移っていました。

Today's menu, grilled pork with oyster sauce, uses oyster sauce. It has the saltiness unique to oysters, and the oyster extract and flavor were transferred to the pork.

すき焼き煮ではお麩のかわりにお豆腐が入っていて、よく出汁がしみていて、おいしかったです。ほうれん草のおひたしは、出汁がよくきいていて、食がすすみました。今年初めてのイチゴがでました。
